Herb Parmesan Crusted Salmon

Eating out is one of the activities our family enjoys the most, we are all big time foodies in my home, especially the children. But going out to eat can be expensive with a family a five so learning how to make the food we enjoy from the restaurants we have visited has been a great way to get the dish we want at a price we can afford.

This herb parmesan crusted salmon recipe is actually a recipe I’ve sort of copied from Longhorn, except their main meat is chicken and I used salmon and added herbs as well. To be quite frank, it actually taste better than the original from Longhorn, so my husband says and I believe him (lol).

Now, this recipe is super simple and although it sounds fancy, it only requires a few ingredients and less than 30 minutes of your time if you include the baking part.

Herb Parmesan Crusted Salmon Recipe

Ingredients

4 Salmon fillets

3 cups Mayonnaise

1 cup of Pesto (any kind works)

1 1/2 of Fresh Parmesan cheese

Instructions:

Combine the mayonnaise with the pesto until everything is well mixed and blended. Separate half to use now and the other half to use it later.

On a non stick pan, lightly cover it with the mayonnaise and pesto mixture with a brush or spoon. This step is only done so the fish won’t stick to the pan and you can have a slight flavor added to the bottom of the fish

Lay the salmon fillet on the pan and lightly season it with salt. Now add the pesto mixture to the top of each salmon.

Place the pan on the stove top on high so the bottom of the fish can fully cook. Once the bottom of the salmon is fully cooked, go ahead and mix the

remainder pesto and mayo with the parmesan cheese, to form a clumpy mixture.

Lay the parmesan cheese pesto mix on top of each salmon, forming a crust over it. Take it to the oven and broil at 500 degrees Fahrenheit. Let it broil for about 5 minutes. Once the crust has been formed, change your oven setting from broil to baking at 350 and let the salmon cook for another 5–7 minutes.

Remove the Salmon from the oven and let it cool for 5 minutes before serving.

This dish is great with asparagus, rice, roasted potatoes or even with fresh salad.
