The easiest gluten free pancake ever
My oldest son is a on a gluten free, pretty much a keto diet but what is actually called is GAP’s diet. Many foods are not allowed and that includes flour, baking powder and other baking agents but as I learn to cook for him I also realize that nature itself has provided us with many options so we can still eat the foods we love without having to compromise our health.
Take pancakes for example, did you know that you can make them with just three simple ingredients that are completely gluten free?
If you are on a gluten free diet and love pancakes then this recipe is for you! It doesn’t require expensive ingredients and it’s also healthy, imagine that!
So let’s get you started on the recipe.
3 ingredients gluten free pancakes
Ingredients:
3 tbsp Organic Nut butter (Almond, walnuts, peanuts, etc)
2 eggs
2 zucchinis peeled, deseeded.
Tip: When looking for nut butter, look for the ones that includes no other ingredients besides the nut itself.
Instructions:
1 — In a food processor, add the zucchini and let it work until you have achieved a puree consistency.
2 — Beat the eggs well then add nut butter and mix it well.
3 — Lastly, add the zucchini to the blend trying to hold as much water as you can. Mix it well.
4 — Fry the pancake mix in ghee, lard or butter. Careful not to burn it.
5 — Top it with raw honey, stevia, blueberries, strawberries, jam or real maple syrup.
Was that easy or what ? I must say that this is probably the easiest pancake recipe I have ever made.
To save even more time you can also make more than needed and save the batter for later or you can fry the pancakes, wait for them to cool off and them freeze them for up to a month.
